Yields 10 guests
To make the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Syrup: Put all the items into a pot, bring to a light boil, mixing until the sugar dissolves. After that, remove from the burner and leave to cool entirely. Transfer into a sterilised bottle, seal and store in the fridge, it will last for around four weeks.
To make Cocktail Base: Mix all the liquid ingredients in a large bottle, let it rest for 60 minutes, then pass it through best through cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml of your cocktail base to a cocktail shaker containing ice, and agitate carefully for about 60 seconds to chill. Filter to a chilled martini glass or a similar vessel, decorate with a few cranberries and finish with a quick spritz with the mandarin essence over the top.
